Why kale? {Pourquoi le kale?}

Kale is called a superfood and that’s for good reason. It’s super for many reasons but here are just a few.

  • One cup of kale has only 36 calories but because it is a denser food, you feel fuller after eating the vegetable
  • On the Aggregate Nutrient Density Index, kale scores a perfect 1,000.
  • Vitamin K (1328% RDA), A (192%), C (90%) and E (6%)
  • Calcium (9%) When I was a kid my mom always said to me that one cup of kale has more calcium than a glass of milk!
  • Iron (6%)
  • Vitamin B6, potassium, iron, phytochemicals and Omega 3 fatty acids (10%)
Fiber is what keeps your system going and most people do not eat enough. The recommended intake is 25-30 grams and the average person consumes 10-15 grams. Yet, the more fiber you eat, the more you are filled up and less likely to snack on unwanted, processed food.
Alkaline foods are important as most people have acidic-heavy diets which can alter your PH balance. Kale is one of the most alkali foods out there and is a great way to bring your PH back to a healthy level which helps increase circulation and decrease inflammation.
