Another week gone by and a few great kale updates to report. Full list below and you can always find out all details on the #KaleSpotted Google Map.

In the meantime, I want to share a few things that I read this week that peaked my interest (and no, it was not the NYTimes article!)

  • Seasonal guru, Paris Paysanne reminds us that while leeks are available all year, they are In-Season now and shares her recipe for Leek Velouté.
  • Read more about grass-fed beef and a restaurant’s pledge that it will only ever serve grass-fed and could there be hope that the 97% of grain-fed cows will decrease as time continues and demand for grass-fed beef increases? We all know it is better for our health and for the environment.
  • Will farm to table be a thing of the past? Are chefs move even more towards seed to table? NYC chef Dan Barber’s summit held at his Stone Barns Center for Food & Agriculture was all about talking to independent breeders who want to do good and not Monsanto bad. Meaning traditional, ancient seed-breeding which has been done for hundreds of years to produce better flavor.

    Dear Kristen,
    Our AMAP Champs Libres in Fontenay sous Bois (94) has Kale since this autumn, I had NO IDEA what this was (don’t even say how to COOK it)…
    Let’s start with a gratin (inspired from Alain Passard)
