The Kale Project & Loustic

Last week I spent two days working with the team at the Marais’ new espresso bar, Loustic, for the exciting launch of The Kale Project products. Channa, Loustic’s owner, nicely put kale in the window for a little publicity.

The design of the espresso bar is cozy with banquette seating, inspired by the Orient Express. A great spot to spend some time with Channa’s fantastic coffee (beans change every few weeks).

A raw kale salad (inspired by the recipe from NYC’s great Alphabet City eatery, Northern Spy)…

Kale chips lightly seasoned with sea salt…

And a green juice is on the way…

For the time being, kale salads won’t be served everyday because I’m still figuring out logistics but it’s been great fun so far.     LOVE it that you’re Kale-ing it up at Loustic (and love the Breton name for smart ass!). I shall keep abreast to see when you’re there next to dip in for some Kale Pesto. Yum Yum!

      I love (and so will the owner) that you know what Loustic means!! Most people don’t.

    Nice project! Despite we eat organic we are getting used to this vegetable, a very common one in the UK. Where can we find unsual recipes which can make kale enjoyable even for the children?

      Hi! So a few recipes that other parents love are kale chips and a kale smoothie with banana & apples (or blueberries). This is a good one for kids for a morning or afternoon snack. I know a lot of moms swear by kale chips. Let me know how it goes!
