Have you been to Holybelly yet? If not you must check it out! I first heard of Holybelly months ago when one of their chefs emailed me asking where they could buy kale to use in their October menu.
It opened last week and I enjoyed a wonderful breakfast with Chemex coffee with Emily of Paris Paysanne talking about what’s to come in our lives. (What is it that is just so satisfying about good coffee and breakfast with friends?)
While I went to taste and photograph the kale salad, what really stood out was the incredible breakfast options. Eggs any way you want them with mouth-watering sides (barley hashbrown!) were a dream for a grey, cold Paris morning – and they are available all day.
And the kale salad was pretty great too. Dressed with hazelnut oil and sherry vinegar and mixed with spelt, pear, roasted hazelnuts and aged gouda, the mixture of sweet and savory flavors left me craving more.
To top it all off, owners Sarah & Nico (read about their adventures in opening Holybelly here) and the rest of the staff were so friendly and welcoming that it will be impossible not to return again and again.
