When I dreamt up the idea last November about re-introducing kale to Paris, I spent a lot of time researching kale, kale in France, kale in Europe and beyond. One of my discoveries was on Amazon.com. Or should I say, lack of discovery. The only book available that had anything to do with leafy-green recipes was from 1996.
Luckily, over the past year, a few others have come out. The Book of Kale, is every kale-lover’s dream. Written by Canadian Sharon Hanna, this woman knows her kale, and is Canada’s Queen of Kale. Plus she is a pretty awesome gardener too, so she knows the vegetable from beginning to end. And she is this week’s For The Love of Kale.

Describe what kale tastes like in one sentence.
Kale tastes like…nothing else exactly! Kind of like collards, a little like broccoli, but not. Hard to describe! After kale has been kissed by frost in the garden a few times it tastes much sweeter and the texture is more tender…
When was the first time you tried kale? How? What did you think?
To be honest, I cannot remember. I knew it was good for me so I ate it but…was not so thrilled.
What is your favorite way to eat kale?
I think sautéed in a bit of olive oil and garlic with pancetta or a bit of bacon, with lots of lemon juice added. I also love the edamame kale fritters in my book! The accompanying salsa/chutney is unbelievably good!
If you were serving kale to a kale-virgin, how would you prepare it?
As above with pancetta or bacon. And with lots of chopped parsley and lemon juice.
Your book is a best seller in Canada, so clearly Canadians love kale. Can you tell us more about the perception of kale in Canada? Is there a unique dish that is commonly made?
Well…I think it’s not so much that Canadians “love kale,” but they know it’s good for them and didn’t particularly know a lot of ways to prepare and enjoy it. Sad to say, there is not unique dish. Not like in The Netherlands where “stampot,” is very popular and has been for 100s of years. However, if I had to name one thing or point to it, people seem to remark and ask questions about kale chips more than anything else!
