This week I got some good news from my friend who has been buying her kale from Joël Thiebault at the Rue Gros market. The kale is selling out early in the morning and it’s not just being sold to the foreigners anymore – the Parisians have caught on and are liking it!
Another Parisian who loves kale is Amélie, the author of the food blog, Chlorophylle en Lémurie intérieure. Having spent time in Montreal, she is very familiar with kale and was one of the first people to support The Kale Project.
Not only does she share fantastic vegan and raw recipes on her site, but she is also hosting pop-up vegan/raw brunches throughout Paris. And from the photos I’ve seen, this is something you do not want to miss.

When did you first try kale?
In Montreal, autumn 2010. But at the beginning my first experience with kale was not pleasant. But my first positive experience with kale came with a green juice. It was revelation! And now, I can’t live without this magic green!

What is your favorite way to eat kale?
I love green juice with kale. The sensation is indescribable and I’m also crazy about kale salads or marinated kale with different salsa, spices, seasonal fruits, nuts, dried fruits…
Je l’aime en jus, c’est une sensation indescriptible mais je suis folle des salades de kale ou du kale marine avec des sauces toujours différentes, des épices, des fruits de saison, des noix, des fruits séchés…
If you were serving kale to a kale-virgin, what would you do?
I think rolls with marinated kale and creamy salsa or something like that in rice paper. Or… kale chips.
Des rouleaux ! Une salade de kale marinée avec une sauce crémeuse ou quelque chose comme ça, dans une feuille de riz. Ou… Des chips de kale !
As a child growing up in Paris, what did you think of vegetables? What did you think of chou?
Vegetables were always on the table and I love them. Broccoli, cauliflower, mushrooms, tomatoes, beets, salads, carrots… All of them. Cabbage too.
Il y avait toujours des légumes sur la table et j’aimais ça. Brocoli, chou-fleur, champignons, tomates, betteraves, salades, carottes… Tous, choux y compris !
What is your opinion of the French perception of chou?
I think French perception is between hotpot and stomach-ache! And they think cabbage’s season is always so long…But with kale, it will be different! And… have you ever seen the French classic movie “la soupe au chou” with Louis de Funès? It could be a definition for the French perception of chou!
Pour les français le chou se situe entre potée et mal de ventre ! Et la saison des choux est toujours trop longue… Mais avec le kale, ce sera différent ! Et… Est-ce que tu as déjà vu “La soupe au chou” avec Louis de Funès ? Ce peut être une sorte de définition de la “french perfection of chou” !
