So I’m not a big sweets person which is kind of a bummer considering that I live in Paris. Occasionally I’ll buy an éclair and I can be a big sucker for a good mille feuille but I just don’t go ga-ga for all the chocolates and macarons. And being this way living in Paris, I feel almost like I’m committing a French sin. Trust me though, I make up for it when it comes to the cheese.
So when I was asked to participate in Cupcake Camp III, I was not sure what to do. All proceeds go towards Make A Wish, so of course I wanted to donate cupcakes but I’ve literally only baked two other times in my entire life. That’s nothing if you think about it. In 28 years, two times.
So what is Cupcake Camp? The Paris event began two years ago as a forum for people to come together and bring their own cupcakes and enjoy eating them together. It’s one big bake sale where the proceeds go to charity. Not a bad idea and a fun way for expats to enjoy their cupcakes while also introducing them to the French. Yes, the man at Naturalia the other day had no idea what I was talking about when I said cupcake.
So because I like the people that are sponsors and help run it and because I always want to support local, expat businesses, I agreed to do it. Watch out world, Kristen the Kale Girl is going to bake a cupcake.
Now of course me being me and having spent the last six months preaching about la kale, I knew it was important to “stay true to my brand,” (marketing 101 people!). So my cupcake challenge is more than just Googling a cutesy recipe that uses a lot of sugar. Oh no, I am going to do cupcakes and make them vegan and somehow incorporate kale. Kale Kupcakes! C’est parfait!
I know, I’m such a weirdo.
I just couldn’t go to a Cupcake Camp that would have a lot of other foodies there and not be in my Kale Ambassador role.
I’ve done a test-run and my husband liked them. And he’s a big chocolate guy, so if he liked my kale kupcakes, then I think I’m can do this. Now I’m just perfecting my vegan icing and I’m good to go. And if you need me next Friday, I’ll be in my kitchen baking away 24 Kale Kupcakes.

Wow I can’t wait to see how this turns out. A Kale cupcake will be the perfect Halloween Treat. I wonder if you could do Kale Chips but sprinkle them with sugar instead of a savory topping and then stick said chip in some nice green or orange icing.

I know!! So many fun ideas but unfortunately with my horrible baking skills and desire to keep them as vegan as possible… we’ll see what happens!
